Basic Banana "Oatless" Oatmeal
I've accepted the fact that oatmeal for breakfast doesn't work for my body. I don't experience the same level of energy, satiation, and brain clarity that I do with a meal focused on protein and healthy fat. So when I see all the deliciously creamy bowls of comfort showing up on social media, I just have to remember that doesn't work for me. And I just have to make my oats "oatless!"
Basic Banana "Oatless" Oatmeal
- 1 cup full-fat coconut milk
- 2 eggs
- 1/2 banana
- 2 tablespoons hemp seeds
- 1/8 teaspoon vanilla
- cinnamon to taste
- Toppings of choice (nut butter, berries, etc.)
In a small sauce pan, bring coconut milk to a boil. Reduce heat to a simmer and add eggs. Whisk to combine and increase heat back to medium. Add vanilla and cinnamon, cook 2-3 more minutes, whisking occasionally until egg starts to “fluff.” Add, banana, and hemp and whisk until combined. Cook 3-5 more minutes, stirring frequently until oatmeal-like consistency is reached. Transfer to a bowl and add toppings
