Easy Cauliflower Mash
I was recently asked to do a segment for Virginia This Morning on healthier holiday swaps. To prepare for my demo, I tested cauliflower mash in place of mashed potatoes (a traditional favorite among festive family dinners). I was not only amazed how easy it was to make, but how easily it took the place of potatoes!
Easy Cauliflower Mash
1 head of cauliflower, cut into florets
2 cups of water
1 tablespoon of ghee (or sub vegan butter)
1 teaspoon sea salt
1 clove garlic
Directions:
Steam cauliflower florets: heat the 2 cups of water in a large skillet over medium-high heat. Cover and allow to cook until soft, about 10 minutes.
Transfer half of the cauliflower to a food processor and blend until creamy. Add the remaining cauliflower along with the ghee, sea salt, and garlic. Blend until smooth. Enjoy immediately, or reheat later.
