Extra Flavorful Butternut Mash
I make this as a side dish at least once a week! The flavors marry so well to create a vegetable mash that is unlike anything else. A husband favorite too!
Extra Flavorful Butternut Mash
1 box pre-cut butternut squash cubes (or 1 small butternut squash, peeled and diced)
1 tablespoon ghee
1/4 cup nutritional yeast
2 teaspoons Dijon or spicy brown mustard
1/2 tsp garlic powder
1/2 tsp onion powder
juice from 1/2 lemon
1/2 tsp sea salt
2 tablespoons chickpea miso
black pepper to taste
Preheat oven to 400 degrees. Place butternut squash cubes on a baking sheet lined with parchment paper. Coat with oil and sea salt. Roast 25-28 minutes or until fork tender.
Remove butternut squash from oven and place in a large bowl. Add remaining ingredients and using a potato masher or hand immersion blender, process until creamy. Serve warm.
