Feel Good Grain-Free Gingerbread Men

Feel Good Grain-Free Gingerbread Men
- 1.5 cups almond flour
- 1/4 cup coconut flour
- 2 teaspoons grated ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/8 teaspoon sea salt
- 1/4 teaspoon baking soda
- 3 tablespoons melted coconut oil
- 2 tablespoons maple syrup
- 1/4 cup blackstrap molasses
Frosting:
- 1/4 cup coconut butter, melted
- 1/4 cup ghee (not melted)
- 1/4 teaspoon vanilla
Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a large bowl, combine almond flour, coconut flour, ginger, cinnamon, cloves, sea salt, and baking soda. In a separate bowl, whisk coconut oil, maple syrup and molasses. Add wet ingredients to flour mixture and stir with a fork (using your hands if you need to) until dough is formed (should be sticky).
Place dough in the freezer for 10-15 minutes. Place ball of dough between two sheets of parchment paper, and using a rolling pin, roll dough to about 1/8 - 1/4 inch thick. Remove top sheet of parchment paper and use cookie cutter to make gingerbread men. Pull excess dough away and "peel" cookies one-by-one from the parchment paper (I flipped them upside down so they would peel and fall off into my hands). Place them on the baking sheet. Continue this process until all of the dough is used.
Bake cookies 10-12 minutes (up to 14-15 minutes if you want them crispier). Allow to completely cool before icing (ideally ice them the next day after having spent the night in the fridge).
Make frosting by placing all ingredients in a small bowl and whisk to combine. Using an icing kit or small plastic bag (cut a tiny sliver from the corner, squeeze to frost), trace the outline of the cookie etc. Enjoy!
