Fudgesicles
I recently conducted a poll asking my Instagram audience their three favorite foods. Avocado, chocolate, and nut butter were definitely a crowd favorite! This recipe incorporates all of these ingredients! They are a low-sugar sweet treat with healthy fat for blood sugar balance.
Fudgesicles
1 can full fat coconut milk
1 ripe banana
2 tablespoons raw cacao powder
3 Medjool dates, pits removed
⅓ cup almond butter (or nut butter of choice)
¼ teaspoon vanilla extract
½ teaspoon cinnamon
Dash of sea salt
Chocolate Drizzle
¼ cup coconut butter
2 tablespoons coconut oil
2 tablespoons chopped high-quality dark chocolate
Place all ingredients for the fudgesicles in a high-speed blender until creamy. Pour into popsicle molds and freeze overnight.
The next day, add coconut butter and coconut oil to a glass bowl. Prepare a double-broiler, or place on low heat over gas stove for about 5 minutes until melted (whisking with a fork if needed until melted). Fold in chopped dark chocolate and stir until combined and all melted together.
Remove fudgesicles from molds and place on a baking sheet lined with parchment paper. Drizzle chocolate "sauce" on top. Drizzle should freeze immediately. Enjoy right away or store in the freezer.
