Grain-free Paleo Snickerdoodle Cookies

Grain-free Paleo Pumpkin Cheesecake Bars

Grain-free Paleo Snickerdoodle Cookies

  • 1½ cups almond flour

  • ¼ tsp. baking soda

  • ⅛ tsp. salt

  • ½ cup coconut oil, softened slightly

  • 1 cup coconut sugar

  • 1 large egg

  • 1 tsp. vanilla extract

  • 1 tsp. ground cinnamon

Directions:

  1. Preheat oven to 350°F.

  2. Mix almond flour, baking soda, and salt in a small mixing bowl.

  3. In a separate bowl, beat coconut oil and coconut sugar together until light and fluffy, about 2 minutes. Beat in egg and vanilla.

  4. Stir in almond flour mixture until well combined.

  5. Roll dough into balls, either by hand or with a cookie scoop. Place on an ungreased baking sheet about an inch apart and dust with cinnamon.

  6. Bake for 8 minutes, or until slightly browned.
