Grain-free Paleo Snickerdoodle Cookies
This amazing recipe by Jenna Foti is grain-free and Paleo, and makes the perfect topping for the Gratisfied Pumpkin “Cheesecake” Bars with an Empower Bar Crust!
Grain-free Paleo Snickerdoodle Cookies
1½ cups almond flour
¼ tsp. baking soda
⅛ tsp. salt
½ cup coconut oil, softened slightly
1 cup coconut sugar
1 large egg
1 tsp. vanilla extract
1 tsp. ground cinnamon
Directions:
Preheat oven to 350°F.
Mix almond flour, baking soda, and salt in a small mixing bowl.
In a separate bowl, beat coconut oil and coconut sugar together until light and fluffy, about 2 minutes. Beat in egg and vanilla.
Stir in almond flour mixture until well combined.
Roll dough into balls, either by hand or with a cookie scoop. Place on an ungreased baking sheet about an inch apart and dust with cinnamon.
Bake for 8 minutes, or until slightly browned.
