Nut-Free Chili Lime Trail Mix
A nut-free trail mix with a savory flavor! All natural ingredients with no added sugar - something that is hard to find with store-bought versions. Eat it plain or top it on salads for a flavorful crunch!
Nut-Free Chili Lime Trail Mix
- 1 cup raw pumpkin seeds
- 1 cup raw sunflower seeds
- 1 cup unsweetened coconut flakes
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon coriander
- sea salt to taste
- zest from one lime
- 1/2 cup melted coconut oil
- juice from 1 lime
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
In a large bowl, mix seeds, coconut, spices, sea salt and lime zest. Stir to blend.
In a separate small bowl, add coconut oil and lime juice. Pour over seed mixture and toss until everything is coated.
Place mixture evenly on baking sheets and cook 8-10 minutes. Remove from oven and rotate pans. Bake 8-10 more minutes until golden brown. Allow to completely cool.
This trail mix is also able to be made into clusters if desired. Simply coat cooked (and cooled) trail mix with 2 tablespoon melted coconut oil. Line another baking sheet (dish or plate) with parchment paper and scoop trail mix into clumps. Freeze for at least 30 minutes, or until clusters harden. Keep in the refrigerator or freezer.
