Parsnip Fries
Here is a healthy, potato-free alternative to fries! Parsnips are a root vegetable in season in fall and winter. Nutritional benefits include being high in fiber, vitamin C, folate, and manganese.
Parsnip Fries
- 2 parsnips, peeled with ends removed
- 1-2 tablespoons oil (preferably avocado)
- sea salt and black pepper to taste
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Slice parsnips into "fries," about 1/2 inch thick, and place on baking sheet. Coat with oil, sea salt and black pepper. Cook 27-30 minutes until golden brown, tossing about half-way through.
