Peanut Butter Crackers
These were inspired by my husband's love of peanut butter nab crackers, and my love for his health. With only five ingredients, this homemade version is just as delicious yet without all of the processed sugar, soy products, and unhealthy fats.
Peanut Butter Crackers
- 1 cup almond flour
- 1 tablespoon coconut sugar
- 1 egg, beaten
- 1 tablespoon ghee, melted
- 1/8 tsp sea salt
- All-natural, unsalted peanut butter
Preheat oven to 350 degrees.
In a small bowl, combine almond flour, coconut sugar, and sea salt. In a separate bowl, add egg and melted ghee.
Add egg and ghee mixture to dry ingredients. Blend with a fork until dough is formed, using your hands until everything is fully incorporated. Roll in two separate balls.
Grease a piece of parchment paper and lay flat. Place one ball of dough in center and fold parchment paper in half. Using a rolling pin, flatted until 1/8 inch thick. Use a knife or pizza cutter to slice into squares. Place on a parchment paper lined baking sheet and cook 12 minutes (or until golden brown), turning pan halfway through. Allow to cool on a rack.
Once cooled, spoon about a teaspoon of peanut butter onto a cracker and add another cracker on top. Enjoy!
