Pumpkin Spiced French Toast
A perfect fall flavored breakfast or brunch! Pumpkin packs a nutritional punch and this dish is high protein as well!
Pumpkin Spiced French Toast
- 3-4 slices of grain-free cassava bread
- 1 egg
- 1/2 cup pure pumpkin puree
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/2 inch cube ginger
- 1 tablespoon coconut oil
Heat a large skillet over medium high heat. In a high speed blender (or whisk by hand in a separate bowl) add egg, pumpkin, vanilla, ginger and spices. Process until creamy and transfer to a shallow dish. Dip bread slices to coat completely and cook on skillet 2-3 minutes or until golden brown. Drizzle with maple syrup if desired or add topping of choice. Enjoy!
