Superfood Buckwheat Breakfast Pudding
Although this might look like a few servings of a Wendy’s Frosty, it is quite the opposite. What makes this pudding “superfood” you ask? Only the incorporation of five nutrient-dense ingredients! Buckwheat groats, avocado, maca powder, raw cacao and collagen come together to create this energizing breakfast option.
Superfood Buckwheat Breakfast Pudding
Makes 4 servings
Gluten-free, Dairy-free, Egg-free, Soy-free, Vegan optional
2 cups buckwheat groats
2 cups unsweetened almond milk (or dairy-free milk of choice)
½ ripe avocado
2 Medjool dates, pits removed
1 to 2 tablespoons maple syrup (depending on desired level of sweetness)
1 tablespoon collagen peptides (optional for more protein)
2 tablespoons raw cacao powder
1 teaspoon maca powder (optional)
1 teaspoon cinnamon
½ teaspoon vanilla extract
¼ teaspoon sea salt
Directions:
In a medium bowl or one-quart measuring cup, combine the buckwheat groats and unsweetened almond milk. Stir to blend, making sure groats are covered. Soak for a minimum of 6 to 8 hours or up to 24 hours.
In a high-speed blender, combine the soaked buckwheat groats (do not drain!) avocado, Medjool dates, maple syrup, collagen peptides if using, raw cacao powder, maca powder if using, cinnamon, vanilla extract, and sea salt. Blend until creamy, about 1 minutes, using the tamper until desired consistency is reached. Transfer to individual bowls or mason jars and enjoy!
