Vegan Chocolate Superfood Pudding
Raw cacao is one of the world's healthiest foods. It has one of the highest antioxidant profiles: 15x higher than wild blueberries; 20x higher than green tea; 30x higher than red wine. Goji berries are also high in antioxidants - astaxanthin and beta-carotene in particular. When the two are combined, this results in you doubling or tripling your antioxidant absorption. This dessert-like concoction will have you reaping all the benefits while satisfying your sweet tooth.
Vegan Chocolate Superfood Pudding
- ½ cup nut milk (I used homemade almond milk)
- 1 ripe banana
- ½ avocado
- 1 tablespoon raw cacao powder
- 1 Medjool date, pitted
- pinch of cinnamon and sea salt
Directions:
In a high-speed blender or food processor, add all ingredients and blend until smooth. Transfer to a small bowl and place in the refrigerator for 10 minutes to cool. Top with goji berries.
